Vegan Peanut Butter Chocolate Chip Bars

Peanut butter and chocolate have to be one of the best food pairings! I have a ton of PB and chocolate recipe ideas, and these bars are one of the easiest and quickest to make. These bars taste like a thick cookie with a rich peanut butter taste, and you get a gooey chocolate flavor with every bite.

Peanut Butter

I suggest using ultra-creamy peanut butter. You can also use another nut butter if that's all you have. If you are using natural nut butter and the consistency is too thick and stiff, I advise you to scoop it int a microwave-safe dish, heat it for 20 seconds and stir. Repeat this process till you get the desired consistency. You can also achieve this using a high-speed blender: by blending the nut butter till getting that runny consistency.

Flax Egg

To keep this recipe vegan, I used a flax eglar-sizeg made from ground flax meal to replace the traditional egg. The flax egg will help glue all the ingredients together. Mix 2.5 TBSP of water and 1 TBSP of ground flax meal in a small bowl or mug. Then keep it in the fridge for at least 15 mins to set.

Chocolate Chips

I used mini chocolate chips instead of regu because I didn't want the chocolate to overpower the peanut butter. This keeps it balanced with peanut butter and chocolate, so you are experiencing both flavors simultaneously!

Ingredients

  • 1/4 cup (57g) vegan melted butter
  • 1 cup (213g) packed organic brown sugar
  • 2 tsp vanilla extract
  • 1 flax egg (1 Tablespoon flaxseed meal and 2.5 Tablespoon water) 
  • 1 cup (270g) creamy peanut butter
  • 1 1/2 cup (180g) all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup (220g) mini vegan chocolate chips

Instructions

  1. In a small bowl stir the flax egg and place in the fridge for at least 15 mins to thicken.
  2. Preheat the oven to 350° F
  3. line a 8X8 pan with parchment paper.
  4. In a large mixing bowl beat melted butter and brown sugar.
  5. Add vanilla and stir in the peanut butter and flax egg, till well combined.
  6. Add the flour, salt and baking powder. Mix together till the flour isn't visible anymore. The batter will be crumbly with tiny and large crumbs.
  7. Mix in the chocolate chips.
  8. Evenly press batter into the prepared pan and bake at 350°F for 13-15 mins or until a toothpick or fork is inserted in the center and comes out mostly clean.
  9. Take the pan out of the oven and let the bars cool in the pan for 10 mins to allow them to set or the bars may fall apart. Then completely cool on a wire rack.
  10. Cut in squares and enjoy!
