Aquafaba is the magic liquid from a can of chickpeas or garbanzo beans. That viscous liquid can mimic the same functional properties of egg whites, which is great for vegan baking. As a general rule of thumb, 1 Tablespoon (15mL) of aquafaba equals one egg yolk and 2 Tablespoons (30mL) equals 1 egg white, and 3 Tablespoons (45mL) will equal one whole egg. The aquafaba is what will give these lemon scones a soft crumb.
These lemon scones are so good. The first time I made them, they didn't last a full day in my house. I had to make another batch! They are soft and buttery, and the sweet lemon glaze takes them over the top. I hope you enjoy them!
